EYE ON OPERATIONS: With its business expanding in the Southeast, meat and sauces processorFive Star Custom Foods, Ft. Worth, Texas, said it plans to open a second processing location in Nashville, Tenn. Officials said Five Star will renovate and equip a former foodservice distribution site and open the second plant this fall. It could employ as many as 250 people in three years. Five Star processes meat products and sauces for branded food companies and foodservice operators. . . .Southwest Cheese LLC, Clovis, N.M., said it expects next year to complete a $90 million expansion at its Clovis cheese and whey plant. Upon completion, the expansion will boost plant milk processing capacity from 7 million pounds to 10.5 million pounds daily. The operation also will be able to produce 1.1 million pounds of American style cheese and 70,000 pounds of high value-added whey protein powder, officials said. . . . Goats milk cheese processorLaura Chenel's Chevre Inc., Sonoma, Calif., expects in early 2011 to build and open a new $30 million processing facility in Sonoma. The business is owned by Laiteries H. Triballat, Rians, France.
