Despite the economic slowdown, one thing the restaurant industry failed to do away with is that ever-coveted bread basket. Thank goodness. What good is a meal without a hearty roll?! These days, bakery producers are going beyond the bread basket to provide restaurant patrons the ultimate bread experience.

The “skinny” bread
Kontos Foods, Inc., Paterson, N.J., re-launched its SmartCarb flatbread as Greek Lifestyle Flatbread. This hand-stretched flatbread was specifically formulated to appeal to protein-seeking, carb-conscious consumers. The Greek Lifestyle flatbread boasts 15 grams of protein, 21 grams of carbohydrates, just 2 grams of sugar and 190 calories per serving.

Kontos Foods also launched authentic French-style Traditional and Savory Crepes. Dubbed the Lite, Elegant Skinny Wrap, it can be used to create low-calorie sandwiches, appetizers, meals and desserts. Plus, it is significantly lower in calories, fat, carbohydrates and sodium vs. other breads and wraps.

Responding to the gluten-free movement
Rich Products Corp., Buffalo, N.Y., created an authentic, pizzeria-quality pizza crust for the foodservice industry. Rich’s gluten-free products are certified by the Gluten-Free Certification Organization (GFCO), and are individually wrapped to mitigate the risk of cross-contamination.

Rise and shine, it’s still—and always will be—bread time.
