The Nova Scotia live Premium Hardshell Fresh lobster comes in new and improved claw and knuckle, knuckle or leg fresh-frozen meat formats. It’s produced using the company's proprietary all-natural, moisture-retention process to protect and retain moisture.  Operators and processors can store these products frozen, eliminating daily deliveries and live tanks. No pre-cooking or shucking is required.

Incorporating the same proprietary moisture-retention process, Clearwater Seafoods introduced formed lobster meat portions with natural ingredients and formed lobster meat portions blended with wild cod.  Available in either 8- or 15-gram portions, these new lobster meat portions are made by forming and individually freezing the company's premium raw lobster meat into portions. Ready-to-cook and serve, the uniform discs break apart into recognizable pieces of lobster for any dish, including pasta, risotto and steak toppers.

Another option is the new premium lobster meat portions blended with North Atlantic wild cod. This meat, available in 8- or 15-gram frozen medallions, is heat stable and can be molded into a variety of formats, making it a perfect solution for canapés, burgers or meatballs.

Scallop Selects are made from 100% natural, MSC-certified wild caught Patagonian scallops, and formed into uniform medallions, then individually quick-frozen.

New Bacon Wrapped Scallops combine the company’s finest wild-caught Canadian sea scallops wrapped in thinly-cut bacon, making for an oven-ready, no-preparation-required solution.
