AGED CHEESE RIPE
Vermont Creamery unveiled its newest aged cheese, St. Albans, which is a unique American take on the French St. Marcellin. This is the company’s first aged cheese made from 100% cows’ milk and is on track to be its first non-GMO-certified cheese. This cheese recalls Vermont Creamery’s longstanding partnership with St. Albans Cooperative, and takes its name from St. Albans, Vt. The delicate cheese disks are gently placed in sturdy ceramic crocks and wrapped in a breathable perforated film. The interior of the cheese becomes soft and spreadable. St. Albans is available in retail beginning in October.
