Research highlights nutritional value of frozen fruits, vegetables

The nutritional value of certain frozen fruits and vegetables are generally equal to fresh produce, according to "TheJournal of Food Composition and Analysis," a report published by Elsevier, Atlanta. In fact, the amounts of vitamins A and C and folates of some frozen fruits and vegetables were greater than fresh-stored produce.
Conducted by the University of Georgia (UGA), Athens, Ga., in partnership with the Frozen Food Foundation, McLean, Va., the research compares the nutrient content of eight commonly purchased fresh and frozen fruits and vegetables.
