The center will house pilot lines for cell cultivation and precision fermentation, bridging the gap between benchtop and commercial production of alternative proteins.

The innovation center will be used to evaluate processes for the production of new food on a transferable pilot scale.

The new 158,000-square-foot building also houses Emmi Roth’s new state-of-the-art conversion facility, which will cup, bag, wedge, shred, and crumble the company’s cheese products for a variety of leading brands.

This 40% increase in overall pallet capacity is positioned well given the high concentration of frozen food producers in southeastern Wisconsin and northern Illinois.

The line of bags will be produced using a minimum of 25% industrially-recycled, FDA-compliant content.

BelGioioso Cheese has entered into an agreement to acquire Polly-O, the historic cheese brand founded in 1899, for an undisclosed purchase price from the Lactalis Group. The Polly-O brand of cheese will expand BelGioioso’s footprint in the dairy category in addition to its existing Casaro brand. Last year, Polly-O achieved net sales of roughly USD $177 million.
