The Sausage Project makes its bold entry into the consumer packaged goods space with the debut of a better-for-you, chef-crafted chicken sausage. Launching in grocery stores across Denver; Phoenix; Seattle; Sacramento, California; and Los Angeles, the brand is backed by DFG Ventures, the Los Angeles-based venture studio behind cult-favorite brands like goop kitchen and Cravings by Chrissy Teigen. With its modern approach to sausages and support from an experienced team, The Sausage Project is ready to shake up a category long dominated by heritage brands offering limited innovation.

Working with a team of seasoned chefs, led by head of product development Kirk Gilbert — whose two decades of fine-dining experience includes stints at The Ritz-Carlton and The Inn at Palmetto — The Sausage Project balanced time-tested culinary techniques with modern innovation to create a healthier sausage bursting with flavor.

By combining traditional dark meat with lean white meat, The Sausage Project has cracked the code for juicy chicken sausages that are lower in both fat and calories. The sausages contain no nitrates or antibiotics, are naturally gluten-free, pack up to 12 grams of protein per serving and contain 35% less fat than the leading chicken sausage. Easy to prepare in under five minutes using a pan, oven, air fryer or grill, The Sausage Project’s chicken sausages are a versatile weekday hero — delivering as a quick snack, a protein boost to your favorite dish or the centerpiece of a knockout, no-fuss meal.

The brand debuts with three distinct flavors and playful packaging meant to pop off the shelf. The starting lineup includes:

  • Classic Roasted Chicken Sausage – The most versatile pick of the pack, made with all-natural chicken, sea salt and cracked pepper. Pair with mashed potatoes or stir-fry to add extra protein to any meal.
  • Italian Herb Chicken Sausage – A Mediterranean-inspired blend of sweet Italian basil, fennel, mild Calabrian chilies and roasted garlic. Perfect for tossing into pasta or baking with fresh seasonal vegetables.
  • Melty Cheddar Chicken Sausage – Packed with visible chunks of creamy cheddar cheese, this kid-friendly favorite is a go-to for backyard barbecues or hearty breakfast sandwiches.

“While we’re seeing so much innovation across a variety of food categories, the sausage category remains largely unchanged,” said Nathan Tan, partner at DFG Ventures. “We designed The Sausage Project to meet today’s consumer where they are: looking for better-for-you proteins that don’t compromise on taste or convenience.”

The Sausage Project’s chicken sausages retail for $6.99 per 12-ounce pack and are available now at a number of Kroger-owned grocery stores across Colorado, Arizona and Washington, including King Soopers, City Market, Fry’s Food and Drug, and QFC. Next up, they will be landing at Raley’s in Sacramento and Pavilions in Los Angeles, with more to come across the West Coast and Pacific Northwest.
