It’s indulgent flavor in a small bite at an affordable price. Sara Lee Foodservice, Downers Grove, Ill., says it developed Bistro Collection Individual Desserts because (1) upscale desserts are growing twice as fast as traditional offerings (2) chefs identify bite-size desserts as a leading trend and (3) more than half of all patrons prefer smaller portions at the same price versus a higher price. Six new thaw-and-serve portions (2.5 ounces to 3 ounces each) are Hot Fudge Chocolate Cake, Carrot Filled Cake, Classic Cheesecake, Key Lime Cream Pie, Chocolate Peanut Butter Cream Pie and Pineapple Upside Down Cake.
