Columbus Craft Meats brings artisan approach to ‘craft’ meats

Columbus Craft Meats was founded in 1917 by a pair of Italian immigrants in a 2-room flat in San Francisco’s Italian neighborhood. Originally named the San Francisco Sausage Co., the founders opened and closed windows, using San Francisco’s climate to aid in the curing and drying process for the salami. The name was changed to Columbus Craft Meats after it expanded to a location off Columbus Avenue in San Francisco.

Fast forward to today, and Columbus Craft Meats produces a wide portfolio of premium meats, including salami, deli meats (turkey, ham, roast beef and chicken) and Italian specialties such as prosciutto, pancetta and mortadella for grocery, club, foodservice and even e-commerce.

And, as of press time, Hormel Foods Corp., Austin, Minn., entered into a definitive agreement to acquire Columbus Craft Meats’ parent company Columbus Manufacturing, Inc. from Chicago-based Arbor Investments for approximately $850 million.

“As a Millennial-focused brand, Columbus has generated category-leading growth through a passionate commitment to quality, simplicity and time-honored recipes,” says Joe Ennen, chief executive officer. “In Hormel, we are joining an organization whose values and culture perfectly align with our own.”

Over the past two years, Columbus Craft Meats has been moving aggressively to shift its products to antibiotic-free (ABF) meat. This started last year with a line of sliced deli meat, and is complimented by the launch of an ABF sliced salami line, a team of protein snacks, a line of paninos, which are rolled slices of salami and cheese, and Salami & Crisps snacks, which pair salami slices with crunchy cheese crisps.

The company’s success and longevity can be tied to its laser focus on delivering premium craft meats using the same uncompromising artisan methods that started the company. This means using the best ingredients, taking the time to cure or cook products slowly and always looking to improve and develop new products, says Ennen.  

“We have and will continue to remain focused on infusing ‘craft’ into meats, doing for the meat industry what craft beer did for the beer industry,” he adds.

This laser focus is resonating with retailers and shoppers. To keep up with demand, Columbus Craft Meats completed a $16 million expansion at its state-of-the-art salami curing headquarters facility in Hayward, Calif. The 10,000-square-foot addition, the plant’s second in three years, increases salami production capacity by 30%. 

Through all of this success, food safety remains a top priority.  

“For the last four years, the company’s plants have earned an A or AA rating by the British Retail Consortium, an independent organization that sets the standard for global food safety,” says Ennen. “This relentless focus is simply an extension of our stubborn commitment to making great meat.”
