Marco Sweets & Spices, a craft ice cream company that creates culinary-inspired flavors rooted in a love for travel, debuts five flavors that celebrate diverse, global ingredients. A collaborative effort from food and beverage industry veterans Luke Christianson, Avery Henderson, Julian Plyter, a pastry veteran of Eleven Madison Park and founder of New York City’s Melt Bakery, and Spencer Joynt, partner and creative director at Alright Studio, Marco was founded to pay homage to beloved flavors from around the world, and transport them from plate to pint.

Crafted with epicureans in mind and produced in Boonville, New York, each variety of Marco ice cream skillfully layers flavors – including fragrant spices sourced from Brooklyn Spice Company, based in Greenpoint, Brooklyn – bringing dimension and depth to every bite. Flavors include:

  • Thai Coco-Lime - drawing inspiration from Thai-style coconut curry, this flavor blends creamy coconut and tangy lime, with a subtle smokey heat from gochugaru chili powder.
  • Ginger Dreamsicle - the irresistible combination of tart orange and sweet cream, balanced with a hint of spicy, bright ginger and rounded out with floral cardamom.
  • Spicy PB Caramel - based on sweet and spicy nut mix, this flavor features a peanut butter base accented with ribbons of salted caramel and a touch of heat from chile de arbol and Aleppo pepper.
  • Vanilla Chai - traditional vanilla enhanced with the comforting flavors of a cup of chai, including cinnamon, ginger, fennel, cardamom, cloves, black pepper and fragrant Madagascar vanilla.
  • Aztec Chocolate - rich chocolate is enlivened with aromatic cinnamon, ancho chile and chile de arbol in this Mexican hot chocolate-inspired flavor.
