Lastly, the Roy Goat Cheddar is an homage to the buttery cow’s milk English cheddars. The goat milk used comes exclusively from the breed native to the Guadarrama mountains outside of Madrid. Also new is the Roy Goat Cheddar wheel, which requires the skilled ritual of cracking. The tools include a cable of iron inox, which cuts close to the pore of the cheese and invites some of the mold into the wheel, as well as a “lace knife.”
